
Making Ample Hills - Hopelessly Devoted to Moo

Ample Hills make some epic ice cream combos, Hopelessly Devoted to Moo is one that you can no longer buy (time of the year- October) so if you love this combo, here's how to make it yourself.
I'm going to start by saying that if you like to make easy ice cream recipes that can be made and eaten quickly.....this whole process won't be for you. You CAN though, go and buy a chocolate cake and easily make the pudding recipe.
So to get this off to a start, the Brooklyn Blackout Cake is a great standalone cake, pre heat your oven to 160C (325F) and butter and dust with cocoa powder, 2 x 8inch pans. Bake for 25-30 minutes
To make the cake you'll need:
100g unsalted butter, at room temperature
270g granulated sugar
2 large eggs, at room temperature
1/4 tsp vanilla extract
70g unsweetened cocoa powder
3/4 tsp baking powder
3/4 tsp baking soda
a pinch of salt
215g all-purpose flour
165ml cup whole milk
The Pudding Frosting:
600ml water
540g granulated sugar
1 tbsp corn syrup
110g unsweetened cocoa powder
80g cornstarch
78g unsalted butter, cold and cut into 1-inch cubes
1/2 tsp vanilla extract
The Ice Cream:
300ml Milk
300ml Cream @49%
90g Sugar
50g Dextrose
40g Golden syrup
50g Horlicks Malt Powder
1.1g Stabiliser
2tsp Vanilla extract
WOW, there's a serious list of working ingredients. Ultimately though, if you used a store bought chocolate cake you'd make life much easier for yourself.
